I am not a soup person. Never have been, thought I never would be. Part of my weight-loss challenge is to try new recipes. I found this great website, skinnytaste.com, with lots of recipes that are low in fat, and have the weight watchers points along side them. One soup I have always liked was Minestrone and when I found this recipe I thought that I would give it a try. I made a few changes, added potatoes over zucchini (a little higher in the points…), and used a little more broth. It was SO good!
