12 Days #12 – Cranberry Coffee Cake, A Christmas Tradition

Does your Family have any Christmas traditions? Ours does. Christmas is the only time of the year that we get to eat Grandmas delicious Cranberry Coffee Cake, (with the exception of my, and soon to be my sisters, wedding day). As far back as I can remember, we have never missed indulging on Christmas Morning. Of course, we could have it any other time of the year, but then it’s just not as special. Here is our Family recipe, my Christmas gift to you (it’s that good!)

Cranberry Streusel Coffee Cake –

Cake –
• 1/2 cup soft butter
•1 cup granulated sugar
•2 eggs
•1tsp vanilla
•2 cups all purpose flour
•1/2tsp salt
•1tsp baking powder
•1tsp baking soda
•1cup sour cream
•2 cups cranberries (save until last)

Cream butter with sugar until light. Beat in eggs one at a time, than vanilla. Sift flour, baking powder, baking soda, and salt. Add to mixture alternately with sour cream. Spread into a 9×13 greased and floured cake pan.

Streusel
•3/4 cup lightly packed brown sugar
•1/2 cup all purpose flour
•1tsp cinnamon
•1/4 cup butter

Mix together sugar, flour and cinnamon. Blend in butter until crumbly.

Sprinkle streusel and cranberries over the top of the cake and bake at 350 for 45 minutes. Makes about 12 servings (if you want your piece that small…. I prefer 6!)

I plan to continue serving up this family tradition for years to come. It is one of my most favorite parts of the season!
