12 Days #5 – Mock Skor Mmmmmm

I have been making these for years, and it’s probably the quickest, and easiest recipe out of all of our baking repertoire. If you like Skor, you LOVE them!

Ingredients:
  • 24 regular salted soda crackers
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup semi-sweet chocolate chips

Preheat oven to 350F. Line a 13 x 9 inch baking sheet with parchment paper for easy clean up (note: do NOT use wax paper!). Arrange crackers evenly. Melt butter in a saucepan on medium heat. Stir in brown sugar until melted and smooth. Bring mixture to a boil, whisking constantly, until mixture is smooth and bubbly. Boil for 2 minutes and then pour evenly over crackers. Place in oven, and bake for 5 minutes. Sprinkle chocolate pieces evenly over caramel mixture, then return to oven just long enough for chocolate to melt. Spread chocolate evenly with a spatula and place sheet in refrigerator or freezer until chocolate is firm. Cut or break into pieces.

After breaking mine up, I usually put the pieces into an air tight container, and keep it in the freezer until the day I am going to use it. I find it tastes best cold 🙂
