Apple Nut Cobbler

Need a warm pick me up on a rainy day? I would suggest making this quick and easy dessert. After I posted a picture of this on my instagram I was asked to post the recipe, so here it is.

Apple Nut Cobbler



1 apple
1 lemon, juice approx 1/4 cup
3 tbsp maple syrup or agave nectar (I’ve made it without this and it was delicious)
1 tsp cinnamon
Pinch of nutmeg

1/4 cup almonds
1/8 cup pecans (you can substitute any of the nuts with a different nut you enjoy)
1/8 cup walnuts
1/2 tsp cinnamon
Pinch of nutmeg
2 dates chopped
2 tbsp water
1 tbsp coconut oil, melted
Splash of vanilla extract


1. Slice apples into thin slices. Mix the first 5 ingredients in a microwave safe bowl and seat aside to soak.

2. Pulse nuts and spices together until chunky. Place into a med bowl. Blend together dates, coconut oil, water and vanilla until smooth. Add to your chunky nut bowl until fully combined.

3. Microwave apples in juice for 45 seconds. In individual dishes place a layer of nut mixture. Place half the apples on top and top with the remainder nut mixture. If you would like it warm microwave for another 30 seconds.

I added a little greek yogurt on top of mine. Delicious!!

Tammy’s out of the Comfort Zone

Today Karen sent me this picture.


My first reaction was you didn’t share that did you? I’m embarrassed of this. All the photos I’ve posted as before and afters, not one have been of my heaviest. I feel a little sick to my stomach that I’m sharing this but everyone starts somewhere. Yes I was very unhealthy but I had the strength and willpower to make a change.

My husband and I went for a walk this morning. I was sharing with him that sometime I feel guilty about the money I spend on personal training and fitness. It can get a bit pricey but when Karen send that picture it reinforced that I’m investing in me. I’m also saving money being healthy. We don’t eat out nearly as much as we used to plus I am a ex-smoker. I’m not sure but I think my reduction in wine alone pays for at least a few training sessions.

If you are at a point where you want to change I strongly encourage you to maybe talk to me or contact the most amazing trainer I know in Hamilton Eric Cornell. I really hope that from me being a bit uncomfortable sharing this I can encourage at least one person to believe in themselves.

I never wanted you here. You simply were never part of the plan. Growing up and dreaming of my family I never included you.   I didn’t want help from another woman to raise my child.  The plan was for my family to include me, daddy and our children, not you.  I doubt you ever wanted me in your life. I doubt you planned to mother a child that you didn’t give birth to. I can bet that your plan for your family included you, daddy and your children together, not me or my daughter. I can almost bet that when you dreamed of becoming a mother it would be the day you gave birth and not the day you married your husband.  I’m pretty sure you never planned on me being here.

A Lego Birthday Party


Growing up my parents always made a big deal about birthday parties. This is something I want to do for my kids. It isn’t always about the money you spend on the party but the little details that make it special. We have a note book for each of our children. Each birthday we get all of the guests to write or draw a little something. My parents did this for me and I love to look back at my birthdays as a child.

This year our son really wanted to have a Lego birthday party. It was difficult to find any Lego decorations or games. Here are a few things that we did to make his Lego birthday a exceptional one.


Loot Bags

–  Use a 1” circle

punch to cut out 6 circles for each bag. Attach with foam adhesives to the coloured paper bag so they are raised. Write Lego on each circle. You can also make name tags with the Lego font to attach to the bags.

Lego Activities

–  Each child received a 3 in 1 Car Lego kit. We set up a ramp in our backyard for the children to race their new Lego cars down. This was also a part of the loot bag to go home.

–  Give the children a large bin of Lego and see who can build the biggest tower in a 1 min. This is one of those games everyone can participate and really enjoy.

– Give each child a plate of Lego and vote for who made the most imaginative creation, best animal, and most creative vehicle.


Lego Snacks

– Marshmallow Lego men heads. Cut a small marshmallow in half height attach to a larger one. Dip in yellow melted chocolate. Use a food colour pen or fine tip icing to draw the Lego men faces.

– Primary coloured smarties always makes for a yummy snack and goes along with the colour scheme

– You can find

 Lego candies at your local bulk store.

– We used a lego box our son made for all the utensils

– Purchase yellow cups and used black permanent markers to draw on different lego man faces. Each one was different so the kids knew which cup was theirs.

I had a lot of fun organizing this party for our son. It was a great colour scheme of 4 primary colours, which made it easy to find coloured plates, forks and na

pkins. Our son really loved helping out in making the decorations with his Lego. I hope this gives you some Lego ideas for your little ones special day.

Motivational Monday + Our fun morning at Wizard World!

Our first week of challenge was great. We stuck to our goals, and both lost some weight. I am down 2.6lbs, and Tammy is down 0.9lbs, which means I’M WINNING!! I’m looking forward to dropping my kids off at her house for the day next month 😉

We are looking forward to another week of it, though I’m sure with two decent losses for me, she will probably do better when we weigh-in next Monday. And while I may be taking her down when it comes to weight-loss, she took me today today Jousting while we visited Wizard World!


We had SO much fun this morning at Wizard World in Hamilton. The bouncy castles, the rides, magic show and of course at the Petting Zoo. I even got to pet an OWL (that is something I’ve always wanted to do!) If your in Hamilton, it’s happening all week long for March Break at the Careport Centre.
